december printable: lussekatter recipe!

Lussekatter are a traditional Swedish saffron bun — they're baked to celebrate St. Lucia Day on December 13th. They're the most beautiful golden light, which I think is meant to symbolize light in the middle of the dark Scandinavian winter. St. Lucia would walk around with candles in her hair wearing a white shroud, and pass out lussekatten and gingersnaps to the poor folks in the neighborhood.
(Though I just read a little page about her when getting this image and apparently "according to legend, she would carry food and water to Christians who had been forced to hide out in the catacombs of Rome. The catacombs were dark, and Lucy needed her hands free to carry supplies. So, she engineered an ancient version of a headlamp, wearing a wreath of candles on top of her head to light the way." So it was more of a religious persecution thing. She was also brutally murdered because she refused to give up her chastity to marry the pagan she was bethrothed to. Why does history hate women so much!!!)
ANYWAY I was right about St. Lucia Day symbolizing light in the middle of the Scandinavian winter!! On St. Lucia Day, young girls will dress up like her and either serve their families baked goods like she would, or take part in some sort of celebration. (You don't have to wear real candles in your hair, battery operated are just fine)
Anywho!! Here you go! This is a halved recipe from my grandma's Swedish cookbook, so it's pretty legit. ;•) I know the "half an egg" is weird, but I just cracked the egg into a bowl, lightly beat it, and poured half that into the sugar. I used the other half for the egg wash, so it shan't go to waste!

This is so cute!!!! I love lussekatter, and also saffron-cookies that my friend use to do! (not traditional, but very tasty ^^) Lussekatten would be THE instead of the plural, but still totally works!

In my (very catholic) middle school we had a wax museum of saints/martyrs and i was saint lucy!! mostly cause i thought it was sort of spooky that she had her eyes gouged out....though I can’t remember if she did it herself or if it was done to her :/ anyways....happy holidays!!!

It's the same in Denmark. The girl who gets to be Lucia walks in front wearing the candle wreath, and the rest of the girls walk in pairs behind her holding a single candle in their hands. They walk through the dark halls in the school and sing. Afterwards everyone enjoys a Lussebid (Lucy bite).

I love this so much!! I am from Germany and we have a similar tradition on the 6th of December where St. Nikolaus walks around to fill the boots of kids with goodies. I really like it, but I was wondering why it always has to be an old guy (no offence) Santa, Nikolaus,... . That’s why I really enjoyed hearing about this tradition. The candle crown is sooo pretty ✨ thank you for the recipe! ✨💕

Oh I hope you enjoyed your lussekatter! We have the exact same in Norway, and it was always a very big deal who got to be Lucia. I never was, but everyone would go in the Lucia-tog (very tiny parade in a school or kindergarden or similar), have their own light and sing the Lucia song🕯
